At Allelo I decided that every cocktail on the menu must contain a culinary ingredient from the Mediterranean or Aegean that is the predominant flavor. Let it be olive oil, sumac or even Spanish Jamon Iberico. This restraint has helped create a menu that is unique, delicious and keeps you coming back for another sip."
